A Tuscan classic, originally from Siena, this sauce combines a creamy Pecorino cheese sauce with a touch of black pepper. It is mostly offered with the local Pici pasta or Paccheri, but any pasta is good, mezze, maniche, rigatoni, pennoni, fusilli, fettuccine etc.
You can even substitute gluten free pasta!
The addition of the zucchini makes this plate more delicate and is a wonderful touch combined with the Pecorino’s aroma.
